A relish is a British side dish of Indian origin. It is closely related to chutney but has a spicier flavour. Relish is, in fact, a sweet and sour purée made from fruits, vegetables, or a combination of the two, to which sour ingredients like cocktail onions and gherkins are added, alongside spices. The entire mixture is cooked with sugar and vinegar. Unlike a chutney or ketchup, the individual ingredients of a relish are still recognisable. Pear is an ideal ingredient to use in a relish.
