A variation on the well-known peanut nuggets, but here made with freeze-dried mango and white chocolate. The freeze-dried mango is a product from the ElBulli line. It absorbs liquid rapidly, but is perfect for encasing in a rich chocolate. This keeps the mango crispy and allows you to create a very unusual variant on the more conventional peanut version. Finishing with yoghurt powder gives you a light, fresh balance to the richness of the chocolate.
