Braised butterhead lettuce heart with lemon
A forgotten classic from France. It seems unusual to heat an ingredient that is normally eaten cold, but lettuce is just a vegetable, after all. The stock gives the dish a savoury accent and the lemon adds a depth of flavour and tartness.
