Kefir is a fresh, sour dairy drink made by adding kefir grains (a mixture of lactic acid bacteria and yeasts) to milk. This causes the milk to ferment. The resulting drink is slightly alcoholic (0.1–0.3%) and thicker than milk, somewhat reminiscent of drinking yoghurt. For this preperation, we process the kefir as strained yoghurt.
