Achar originated in Asia, particularly India and Pakistan, and consists of various vegetables pickled in a spicy and sweet-and-sour marinade with a bit of bite. There are numerous variations on this recipe, but the basic ingredients are always turmeric, chilli pepper, vinegar and sugar.
