Classic sweetbreads
Sweetbreads are a delicate product but are not difficult to prepare if the right care is taken. Some chefs choose to add a bouquet garni to the cooking liquid but water with salt and vinegar also works fine. The vinegar ensures a lovely pale end result. The photo shows the three steps: raw, blanched, and fried until crispy.
