Cod cooked in baharat oil
This cod has been cooked at low temperature in a flavoured oil. As a result, you’ll get perfectly cooked and flavourful fish meat. By not letting the core exceed 50°C, the proteins will not coagulate and you get a very tender fillet, which falls apart in lamellae. Baharat is a popular spice mixture from the Middle East, it literally means spice in Arabic.
