Salad of grey shrimps, yuzu, and fennel
The yuzu is a citrus fruit from Japan and is also widely used there. Here, the fruit is hardly available fresh, but several brands of juice can be bought in bottles. It is slightly less acidic than lemon and reminds of tangerine. Together with the aniseed-like flavour of fennel, it goes perfectly with prawns.
