Vietnamese-style pickled carrot
Vietnamese dishes often contain pickled vegetables for a touch of acidity and crisp texture. Pickled carrot, dưa cà rốt, is mainly used in lukewarm salads and is staple in Vietnamese bánh mì sandwiches. Dưa cà rốt literally means "sour things". They should be refrigerated for at least 1 day before use.
