Briefly pickled, smoked and roasted corvina
We use the basic recipe for dry pickling: a ratio of 10 parts salt to 1 part sugar. For a sweet dry pickle, use 10 parts salt and 5 parts sugar (or 100% to 50%). Want to add herbs and spices? Limit this to 5%.
Makes 10 pieces.
