Quark ice cream
The subtle cheese flavor of this ice cream makes it applicable in both sweet and savory compositions. Use full-fat quark for the full creamy flavour. Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s.
