Stews are full and rich in flavour, which is further enhanced by adding a light smoky flavour at the end of the cooking process. Here, we do this by blowing smoke under the lid: simple but very effective. The recipe is an example of a stew that goes very well with the smoky flavour, but you can of course apply this technique to various stews. The smoker gives a subtle smoky aroma to the dish through the burning of wood or herbs.
