Glazed semi-dried Jerusalem artichoke
In this recipe we use Moscovado sugar, Moscovado is a soft moist sugar consisting of dark brown, very fine crystals. This sugar contains a high content of natural cane molasses, giving it a sticky texture and a very specific cane flavour.
