Cleaning octopus

There is more to cleaning octopus than you might expect. For most preparations, it is sufficient to remove the ink sac and cut away the beak. In most supplied octopuses the ink sac has already been removed. For other preparations, the skin must also be removed from the legs so that they can be eaten raw in thin slices.
