Kingfish ceviche with grapefruit
This popular fish is often simply called 'kingfish' or 'Yellowtail'. The fish is widely used for sashimi but so much more can be done with it. In this preparation, the fish is cooked in a tiger milk with grapefruit instead of the traditional lime.
