These ice cream clouds are a sponge-like preparation by creating a vacuum. In this case with the flavour of mango and a hint of yuzu. Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s.
