Banana cake
This is a fantastic recipe for an airy banana cake. Use bananas with a dark brown skin for this cake. The darker and older the bananas, the better. This is a fantastic way to use up bananas and therefore a great waste-to-taste component! The spices – such as star anise, cardamom, and peppercorns – in this cake further enhance the banana flavour.
