This delicious yet easy to prepare component of daikon is a wonderful meat substitute in vegan and vegetarian dishes.

In this recipe we use Kōmi Soy Sauce. Carefully selected and imported by SushiSushi, directly from Japan to ensure the highest quality and authentic flavour.

Preparation method

  • Peel the daikon and chop into medallions approx. 2.5 cm thick.
  • Put all the ingredients into a big, wide saucepan and cover with a cartouche.
  • Braise slowly, keeping an eye on the amount of liquid in the pan.
  • Remove the cartouche when the mooli is completely done and allow the liquid to reduce.
  • Glaze the daikon with the cooking liquid.
  • You can serve the braised daikon hot or cold.

  • Delicious in a dish with components of oyster, dill, and horseradish.
  • A marvellous complement to cucumber, ginger, and sea bass.
  • Use in a dish with components of wasabi, cassava, and radish.
