The horse mackerel is found in the eastern parts of the Atlantic Ocean, the Mediterranean Sea, and in the North Sea! The main difference with ‘regular’ mackerel is that you eat horse mackerel without the skin on, as it has barbs on it.

Brining the mackerel makes the surface nice and dry and means the fish cooks evenly.

Makes approximately 12 skewers.
