The John Dory is an impressive fish and is also known as Saint Pierre or St. Peter’s fish. The John Dory is found in the Indian Ocean from South Africa to Japan and Australia but is also caught in our North Sea! This might well be the most classic Mediterranean flavour combination with fish. The sweet and sour elements accentuate the elegant flavours of the fish perfectly.
