Ice cream with cinnamon, long pepper, and star anise
An ice cream that is extremely rich in flavour thanks to the long pepper and star anise. This recipe is egg-free – as ice cream should be. Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s.
Makes 1500g.
