Horseradish ‘milk’
A foam based on almond milk with horseradish. A delicious sauce that is used at Flore to garnish the dish ‘vegetables of the season’. Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s.
