Nasturtium tofu
This ‘tofu’ is based on almond milk. Do make the almond milk yourself – there’s a huge difference in taste compared with shop-bought milks! Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s.
