This super light beetroot meringue doesn’t contain any sugar, making it savoury. The onion powder adds a punch of umami flavour!

onion powderPreparation method
Add the MSK Ultralin and MSK Ultrawhip to the beetroot juice in a planetary mixer.
Whisk on full speed until stiff peaks.
Pipe onto none stick silicone mats.
Dust with the onion powder
Dry in a dehydrator for 12 hours at 60°C until crisp and dry.
Store in an airtight container.

- Perfect as part of an amuse with radish, goats cheese, and tarragon.
- Combines perfectly with components of duck, celeriac, and sage.
- Delicious paired with sesame, spring onion, and chili.
