Preparation method

  • Add the MSK Ultralin and MSK Ultrawhip to the beetroot juice in a planetary mixer.

  • Whisk on full speed until stiff peaks.

  • Pipe onto none stick silicone mats.

  • Dust with the onion powder

  • Dry in a dehydrator for 12 hours at 60°C until crisp and dry.

  • Store in an airtight container.

Serving suggestions

  • Perfect as part of an amuse with radish, goats cheese, and tarragon.
  • Combines perfectly with components of duck, celeriac, and sage.
  • Delicious paired with sesame, spring onion, and chili.
