Preparation method

  • Place the carbonated water, cane sugar, lime juice, rum and, MSK Ultrawhip into a planetary mixer.

  • Mix well and leave to hydrate for 5 minutes.

  • Whisk on full power until fully aerated, this takes approximately 6 minutes.

  • Pipe onto a none stick silicone mat.

  • Dehydrate for 12 hours at 60°C until crisp.

  • Store in an airtight container.

  • Perfect as part of an amuse with cucumber, oyster, and parsley.
  • Combines perfectly with components of pineapple, passionfruit, and coconut.
  • Delicious paired with basil, lemongrass, and lemon.
