Pineapple jam
This pineapple jam is delightfully classic made with vanilla, but also modern with the addition of the citric acid. This gives it a refreshing character and keeps it from being too sweet. We also use freeze-dried pineapple which significantly increases the overall flavour intensity.
Recipe makes 1900g.
