Tom about this component: “Previously at Alyn Williams we had pommes anna on the menu. Naturally from portioning from large trays in the restaurant we generated a lot of trimmings. One day we cooked all these for staff food and couldn’t get enough, they have been on and off the menu ever since here at The Dorchester.”
