Uda brown butter
Uda (also known as Grains of Selim) is a very versatile spice from Nigeria, which has wonderful fragrance and can be applied to savoury and sweet dishes. This spiced nutty butter is great for cooking and finishing proteins. In this recipe we use Ayo Adeyemi’s kani hot sauce recipe as an ingredient.
