Chervil root espuma
A delicate foam with the flavour of chervil root. The cortina provides extreme stability. Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s. It can be replaced with pro-espuma if necessary.
Makes 500ml.
