Chickpea and tahini foam
A fresh and fluffy foam of chickpeas and tahini (sesame paste) with the flavours of hummus.
Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s. It can be replaced with pro-espuma if necessary.
