Skyr tonka bean ice cream
The use of the skyr in this ice cream gives it a fresh-sour tone that makes it palatable. Cortina is an ice-cream emulsifier and stabilizer that is used in ice-cream shops. It’s also very helpful to aerate foams and espuma’s.
