Bring the lime juice, mirin, sugar, water and lime leaf to a boil.
Allow to cool completely and pass through a sieve.
Peel the papaya and cut into neat, even portions.
Place in a container and pour over the marinade, ensuring the papaya is fully submerged. Cover with cling film and poke a few holes in it.
Place in the vacuum machine and run the infusion programme without sealing.
Serve within 2 hours.
