- Wash the blood oranges well with ice-cold water.
- Cut the blood oranges into equal pieces.
- Place in a vacuum bag and mix in the salt.
- Fully vacuum seal using the vacuum machine.
- Leave to lacto-ferment at room temperature for 7 days.
- May the bag inflate, cut it open and re-apply vacuum sealing with the liquid-control programme.
- Then leave to mature in a cool place for another 7 days before use.

- Delicious in a dish with duck, yellow beetroot, and lemon thyme.
- Pairs well with pumpkin seed, ginger, and scallop.
- Perfect with a creamy ice cream.
