Cheese crémeux with olde remeker
This recipe for cheese crémeux from Olde Remeker gives exactly the texture of cheese in a new shape. Olde Remeker is a Dutch, raw milk, natural rind cheese matured for 13 months. It has an intense flavour – creamy, yet with the 'crunch' of protein crystals.
