Kingfish jaw with yuzukosho
Kingfish is a beautiful, slightly fatty and delicate fish. The jaw of the fish, known as kama, lends itself perfectly to grilling. Classically just with sudachi or lemon. Here, we finish it with yuzukosho sweetened a little with mirin, honey and soy sauce.
