Sablé breton
A classic French shortbread base with a rich flavour thanks to plenty of butter and egg yolk. The dough contains baking powder, giving it an airy, almost cake-like structure. Often baked in circles or rings, it is perfect as a base for tartelettes or as a crunchy element in plated desserts.
Makes 1300g of dough.
