Comté cheese ice cream
A surprising ice cream made from Comté cheese aged for 24 months. The ageing process gives the cheese a powerful flavour. This recipe uses Cremodan as a stabiliser, but this can be replaced by another stabiliser that contains a binding agent.
Creation by Tim Boury, Boury***, Roeselare, Belgium.
