Yassa is a classic West African dish known for its deeply caramelised onions, fresh citrus flavour and aromatic spices.
The onions are marinated overnight with lime, garlic and ginger. They are then slowly cooked with nokoss, a fragrant blend of herbs and peppers, until they are soft, rich and jam-like.
