Pumpkin seed oil sorbet

Pumpkin seed oil has a deep green colour and flavour. In this sorbet, sweetness is combined with the oil’s richness, resulting in a surprising sorbet. Spagna is an ice cream stabiliser containing, among other things, guar gum, locust bean gum and sugars. You can replace this with another stabiliser, such as Prosorbet. Do adjust the dosage accordingly.
