Lovage oil sorbet

Lovage has a green and umami-rich flavour. In this recipe, we use lovage oil. This gives you not only a lovely green colour but also a pure lovage flavour. Spagna is an ice cream stabiliser containing, among other things, guar gum, locust bean gum and sugars. You can replace this with another stabiliser, such as Prosorbet. Do adjust the dosage accordingly.
