Watermelon is a product that absorbs flavours very well. The watermelon is infused with a marinade of basil and various types of vinegar. The end result is sweet and sour with a hint of basil, perfect for both sweet and savoury dishes.

Preparation method

  • Blanch the basil for about 10 seconds and immediately transfer it to ice water.

  • Place all the basil in a clean tea towel and squeeze out all the moisture.

  • Blend the basil, water, and sugar in the thermoblender until smooth.

  • Then heat the sugar solution in the thermoblender to 80°C.

  • Strain through a fine sieve lined with a coffee filter or cloth.

  • Cut the watermelon into the desired size.

  • Mix the basil sugar syrup with the mirin, white wine vinegar, and sushi vinegar. Do this à la minute; otherwise, the basil sugar syrup will discolour.

  • Place the watermelon and basil marinade in a container so that the watermelon is at least ¾ submerged.

  • Set the marinating programme without sealing.

  • Serve the watermelon within 2 hours.

  • Delicious in a dish with prawns, burrata, and tomato.
  • Pairs well with feta, cucumber, and olives.
  • Perfect with strawberries, mascarpone, and white chocolate.
