It's a shame when lovely original recipes are lost so quickly as soon as they cross the border. One clear example of this is Turkish cacik. When you order the original kebab bread roll in Turkey, it comes with this sauce made from yoghurt, cucumber, mint and garlic. Unfortunately, the sauce has been changed in the Netherlands into one made from Dutch chips sauce (type of mayonnaise) and garlic. The original sauce is fantastic and can be used at all levels of gastronomy, as a dip, as a sauce, as a dressing and even diluted as an ice-cold soup for summer. Greek tzatziki is pretty much the same.
