Ingredients

Preparation method

  • Chop up the crayfish waste.
  • Roughly chop the shallot.
  • Sweat the shallot in a dash of the vegetable oil.
  • Add the crayfish waste and tarragon and fry off for a minute or 2.
  • Add the tomato paste and mix well. 
  • Add the bay leaf and vegetable oil and allow to infuse for 3 hours at 60°C.
  • Strain the oil through a fine sieve and keep in the refrigerator.

Serving suggestions

  • Use the oil to make a crayfish mayonaise.
  • Use the oil to confit crayfish.
  • Use the oil in a vinaigrette with buttermilk.
