Preparation method

  • Boil the cane sugar and water, add the tea bags, and leave to infuse for 15 minutes on a very low heat. Set aside to cool completely.
  • Cut the pears into neat cubes and place together with the caramel tea syrup in a low bowl that fits in the vacuum machine.
  • Pull vacuum twice in the vacuum machine. The vacuum process first causes the structure of the pear to open up before the pear is completely impregnated with the syrup at the end of the process.
  • Allow to infuse in the refrigerator for at least 4 hours until the pear is completely translucent.

Serving suggestions

  • Serve as a garnish with a dessert containing components of banana, chocolate, apple, or vanilla.
  • As part of a friandise, e.g. incorporated in a bonbon.
