The courgette is a vegetable that is a member of the cucumber family. It is a very versatile vegetable as it can also be eaten raw. In the Netherlands, courgettes are harvested when they are 7cm or more in size; the smaller the courgette, the tastier it is. The large flowers of the courgettes can also be prepared and eaten.

Basic techniques: frying, barbecuing, deep-frying, gratineeing, grilling, confiting, marinating, baking, stir-frying, smoking, roasting, stewing, stuffing.

Taste combinations: mint, ginger, walnut, goat's cheese, sherry vinegar, mustard, apple, chorizo, sheep's yoghurt, lemon thyme, allspice.
