The raspberry is a popular fruit that can be found naturally throughout Europe. A distinction is made between summer and autumn raspberries. Summer raspberries can be picked from the end of June to mid-July and autumn raspberries from early August to early October. In general, raspberries have a sweet/sharp flavour and a warm, woody character. They go nicely with other sweet/sharp fruits, as well as cream, yoghurt and soft cheeses.
Basic techniques: preserving, puréeing, marinating, ice cream, stuffing.
Taste combinations: almond, apricot, basil, chocolate, coconut, blackcurrants, figs, goat’s cheese, hazelnut, mint, peach, pineapple, strawberry, spinach, yoghurt, cream and vanilla.
