Roasted gherkins
You can give gherkins a lot of flavour by buying fresh gherkins in season. Make your own pickling liquid with suitable spices, herbs or vegetables. Pickling takes a few weeks, but the end result is well worth it. Roasting gives the gherkins even more character.
