Smashed potatoes with beurre noisette and chives
This simple side dish of potatoes is quite a surprise in terms of both taste and appearance.
Makes 400g.

Ingredients
- 400 g potato, La Ratte, Jac van den Oord
- 40 ml beurre noisette
- 4 g chive, finely cut
- as needed salt and pepper
Preparation method
- Rinse the potatoes and chop into 3cm pieces.
- Boil for about 15 minutes in plenty of boiling, salted water, until they are just about done.
- Drain the potatoes.
- Use a spoon to smash the potatoes until their thickness is reduced to about half.
- Finish with beurre noisette and chives.
- Season to taste with salt and pepper.
Serving suggestions
- Delicious in a composition with components of venison, green cabbage, and truffle.
- Combines well with components of cod, green herbs, and mussels.
- Use in a composition with components of artichoke, tomato, and aubergine.
