Smashed potatoes with beurre noisette and chives

This simple side dish of potatoes is quite a surprise in terms of both taste and appearance.

Makes 400g.

Ingredients

  • 400 potato, La Ratte, Jac van den Oord
  • 40 ml beurre noisette
  • chive, finely cut
  •  as needed salt and pepper

Preparation method

  • Rinse the potatoes and chop into 3cm pieces.
  • Boil for about 15 minutes in plenty of boiling, salted water, until they are just about done.
  • Drain the potatoes.
  • Use a spoon to smash the potatoes until their thickness is reduced to about half.
  • Finish with beurre noisette and chives.
  • Season to taste with salt and pepper.

Serving suggestions

  • Delicious in a composition with components of venison, green cabbage, and truffle.
  • Combines well with components of cod, green herbs, and mussels.
  • Use in a composition with components of artichoke, tomato, and aubergine.
